Roasted Garlic Peppercorn
Char Crust Reverse-Seared Steak
Ingredients:

- 1 filet mignon
- Char Crust® Roasted Garlic Peppercorn
- 1/2 tbsp oil
- 1 Head of garlic, halved
- 2 tbsp of butter
Instructions
- Preheat oven to 225 degrees and prepare the middle rack.
- Take steaks out 1 hour before cooking, and season with the Garlic Peppercorn Rub after 30 minutes.
- Place into the oven for 30 minutes for medium rare, 35 minutes for Medium, 40 minutes for medium. This time will fluctuate depending on thickness, so be sure to check the temp.
- Allow steaks to rest and heat a cast iron skillet over medium high heat, add oil and garlic.
- Add the steak when the oil starts to give off a tiny bit of smoke, sear for 1 minute a side, flip, then add butter.
- Baste the steak for extra flavor. If cooking a thick steak, sear all the sides.
- Since this rested out of the oven, before we seared, we do not need to let this rest!
