Brie Burger with Smoked Ham

Ingredients (Serves 2)

  • 2 x 6oz ground beef patties 
  • Char Crust® Original Hickory Grilled
  • 2 brioche or bakery-style burger buns
  • 4–6 slices Brie de Meaux
  • 4 slices smoked ham (Speck or similar)
  • 1 cup cherry tomatoes
  • 1 tbsp olive oil
  • Salt 
  • 1/4 cup mayonnaise
  • Fresh basil (finely chopped)
  • 1/4 small onion, thinly sliced
  • Leaf lettuce
 

 

Instructions

1. Roast the tomatoes

Preheat oven to 400°F.
Toss cherry tomatoes with olive oil and a pinch of salt. Roast for 15–20 minutes until softened and slightly caramelized. Set aside.

2. Make the basil mayo

Mix mayonnaise with finely chopped basil. Refrigerate until ready to use.

3. Form and coat the burgers

Shape beef into 2 patties.
Fully coat each patty with Char Crust® Original Hickory Grilled

4. Cook the burgers

Grill or pan-sear over medium-high heat.
Cook about 4–5 minutes per side, depending on thickness.
In the last minute, top with Brie and let it melt.

5. Toast the buns

Lightly toast buns on the grill or in a pan until golden.

6. Build the burger

Spread basil mayo on both sides of the bun.

Layer in this order:

  • Lettuce
  • Brie-topped burger
  • Smoked ham
  • Roasted cherry tomatoes
  • Thinly sliced onion

Top with the bun and serve immediately.
