PAN-SEAR

  • Preheat cast-iron pan to medium-high (400 - 425 degrees)
  • Dredge meat or fish in Char Crust just before cooking
  • Drizzle or spray surface of seasoned protein with canola oil or other oil suitable for high-heat cooking
  • Place meat or fish in pan.
  • Cook for 2 minutes, then flip and cook for 2 minutes on the other side
  • Flip protein every 2 minutes during cooking to ensure even cooking and no burning
  • Continue cooking until desired level of doneness is reached
